What we Did with all that Corn

Last week we took a drive to the Amish community near Marion, Ky and bought lots of goodies.  You can read that post here.  We bought 3 dozen ears of corn so today I'll show you what we did with them.

The first thing we did was shuck and wash it all, pulling off as much of the silk as we could....


Taking a sharp knife we cut off all the kernels.  You have to be careful to not cut any of the cob, so try to just cut about the top 3/4 of each kernel...


Toss the corn into a bowl and with a spoon, scrape down to force all the corn milk off the cob and into the bowl.  You'd be surprised by how much milk you get...


It's a rather messy job...


Once you get all the corn cut and the milk from the cob, pour it all into a large pot....


Add a cup or 2 of water.  Just enough to keep the corn from sticking to the bottom of the pan and burning...



Slowly bring to a boil.  I stirred and boiled for about 4 minutes.  Once it's cooked, pour it all into another pot.  The reason for this is that the new pot won't be hot from the stove...


Fill your sink with cold water and ice.  Plunge your pot into the cold water and let it sit for about 15 minutes.  This will cool down the corn really quick and keep it from cooking any more...


Package the cooled corn into serving size baggies and then stick them in the freezer.  3 dozen ears of corn gave us 12 baggies full for future meals....


We kept one bag out and heated it on the stove for dinner.  I just added a little butter and salt to the pan while it heated up.  Holy corn!  It was wonderful.   SO much better than canned corn.


So the next time you find fresh corn on the cob don't be afraid to stock up and try this method.   It took us about an hour and a half from start to finish.  It's well worth the time and effort.

  2. That's a great idea and so nice to have in the freezer. I don't usually ask about buying in bulk at my farmers mkt but maybe I should try to get more corn while it's in season! Hugs!
