It's that time of year again where I dig out my canning stuff and start making jelly. One of my favorites is peach mango jelly.
You start with nice peaches and mangoes....
Add sugar, pectin, lemon juice and a couple of tablespoons of Grand Marnier. It adds a really nice flavor...
Cook it down until it's thick and a beautiful golden color....
Process in a rolling water bath for 10 minutes and you're done....
I use "The Jamlady Cookbook" by Beverly Alfeld. It has lots of really nice recipes in it as well as chapters on processing and preserving. It's one of my favorite cookbooks.
I made a batch last Sunday and I've already eaten one, whole jar. Myself. I also gave my mom and dad 2 jars. This stuff goes quick!
Sounds yummy! I've never tried that! What do you mean by a "rolling water bath"? And do you add any sugar?
ReplyDeleteI used to make strawberry jam when I lived in Mexico! Strawberries were yummy and oh so cheap!!! My parents got me this HUGE copper pot (for lack of a better word, with handles on top) for jam making. One of our friends there (a French chef) taught me how to make the jam and how to see if it was ready by blowing bubbles through a sieve-spatula... I loved it! :o)
A rolling water bath is when you put the jars of jelly into a pot, cover it, bring it to a boil and leave it boil for 10 minutes. That's all there is too it!
DeleteTell me more about this blowing bubbles thing to tell when it's done. I always sort of guess at when I think it's thick enough.
This looks yummy! I love peaches! I used to make jam all the time, but haven't made any for years. I was going to ask the same thing about the sugar. Are the peaches and mangoes so sweet that you don't need sugar? and do they have enough natural pectin that you don't use any?
ReplyDeleteWhen I made the strawberry jam I was told the pectin was unnecessary, so I've never really figured out what that is!

ReplyDeleteSave me a jar! heehee! It sure is a pretty jam and I know it tastes yummy. I can't eat sugar so I buy spreadable fruit and eat it sparingly. I was surprised yesterday when they had 2 new flavors...blackberry and orange. I got one of each! Enjoy your weekend!
